What Net Cooked

I just put Net on a plane and am settled back at home with Caroline (attempting) her afternoon nap and Duncan dosing in and out in the bouncy seat right beside me. My to-do list for a baby shower I'm helping host tomorrow evening is staring at me, and I'm in disbelief at the little that is left for me to do. All thanks to Net working like a Turk all week! And then when scrolling through my pictures of the last week I realize that in nearly every single one she's wearing an apron! Good thing I know she loves to cook.

Documentation that she sat down a little bit! When we were talking about Net's visit Ryan couldn't quit listing the things he wanted her to cook. I had to remind him that she was coming to help me with the children while he pulled a week of nights. She ended up not only getting up part of every night with Duncan and entertaining Caroline, but also cooking a ton of food. 

So what did Net cook? 

For supper one night it was cornbread, squash and onions, black-eyed peas and mustard greens. Another night it was meatloaf and cheesy potatoes. Yum!

Caroline is no longer interested in her toys - she just wants to cruise around the house and look at everything. And pull up on anything that will stand still. It is, by far, the cutest stage yet. She does this little crab-crawl with one leg bent up. Net says Uncle Buford crawled the exact same way!

She also made a rum cake - a favorite of all her grandchildren.

Net's Rum Cake: 
l box Duncan Hines Yellow cake Mix 
l pkg vanilla pudding 
4 eggs
l/2 cup wesson oil 
l/2 cup light rum
l/2 cup cold water

Beat above ingredients for 10 minutes @ medium speed. Bake in greased and floured tube pan.

Sprinkle the bottom of pan with chopped nuts and then pour in batter. Bake @ 325 for one hour. When done and before removing from pan, pour following topping over cake.

1 cup sugar
1 stick butter
1/4 cup water

Boil for one minute after it has started boiling. After slightly cool, add 1/4 cup of light rum. Pour over cake while warm. Let cake stay in pan until cool and then remove.

The couples baby shower I'm helping with is themed "Burgers & Books" so we are grilling out hamburgers and then all the dishes correspond to a children's book. 

So we have Goodnight Moon Sugar Cookies...

Peter Rabbit Bacon & Tomato Cups

2 10 oz cans diced tomatoes & green chilies, drained
1 cup mayonnaise
2 cups white mild cheese (Swiss or monterary jack)
2 teaspoons dried basil
16 slices cooked bacon, crumbled
1 small onion, chopped
2 10 oz cans flaky, layered canned biscuits

Stir all ingredients together except the biscuits. Seperate each biscuit into three layers and press into a lightly greased mini muffin tin. Fill each with tomato mixture and bake @ 375 for 10-12 minutes. *Not sure who to give credit to for this recipe it was passed along to me from someone in the Belhaven Garden Club!

Jack and the Bean Stalk "Mississippi Caviar" 

Net passed this recipe down to me from her friend Beverly...

4 cups cooked black eyed pies (or 4 cans)
Purple onion, thinly sliced
1/2 cup canola oil
1/4 cup wine vinegar
1/3 teaspoon tabasco
1/2 teaspoon salt
2 halpeno peppers, sliced and seeded
6 pieces of crumbled bacon
1 can olives, sliced (optional)

Net and Duncan worn out from the day!

Taking a break to talk to Caroline. Caroline really bonded with Net. Every time Caroline would sneeze she'd look at Net and wait for her to say "Scat" -- it cracked her up every time!
