Vichyssoise is a summer potato soup that is usually eaten cold. Net made this for our supper on Saturday night and it is delicious! This was one of her father's favorite things to eat in the summer. His philosophy on food was "eat to live, not live to eat." I wish I could say that is my philosophy on food. It's not. Mine's basically the opposite.

Cook 2 pieces bacon in a soup pot or dutch oven.
Add 4 medium sized red potatoes, peeled and diced. Boil in about 4 cups chicken broth (or use chicken bouillon and water)
Mash with fork when tender and add basil, parsley, salt, pepper and tabassco
Stir and let simmer about 30 minutes
When steaming (don't let it boil) gradually add in about 1/2 pint half & half
Crumble in cooked bacon

For more seasoning add any/all of the following: lime juice, red wine, cayenne pepper, worchesire, etc.

Top with croutons and parmasean cheese.
