Pepper Nachos & A Fun Weekend

Last night we tried a recipe out of the new Southern Living with our bell peppers from the High Street Farmer's Market. They were amazing!

Pepper and Chicken Nachos: You start with grilling the marinated peppers at med-high heat.


Then you stuff that with a chicken, black-eyed pea, and garlic mixture. Top with cheese and broil.

We had a very fun weekend and I think it was the first one this summer that we've both been home and Ryan's not worked. We both got off early on Friday afternoon (thanks to Millsaps' half-day Fridays for the summer!) and went to see Bad Teacher--it was pretty funny but the language was, as-expected, pretty bad. Laura and Thomas had us over for supper and she made the best crawfish jambalaya. After supper we watched their rehearsal dinner video--priceless and so funny to really hear what everyone said! They have now been married for half a year!

On Saturday we cooked a big breakfast, went to the Farmer's Market, ran errands and cleaned out our blue room. It's now all ready for Martin's first visit in a few weeks (and his parents)! We met DeeDee & John Eric and Lane & Scott at Bravo for supper. I copied DeeDee (so as not to get major food jealousy) and ordered the Blackened Beef Tenderloin Salad and it was amazing. I then ruined a pretty healthy eating day with a huge cappuccino brownie and ice cream. Oh well.

On Sunday we went to big church. I'm sure our Sunday School class has taken us off the roll--we had every intention of making it but then decided to cook pancakes. We took the dogs to the Belhaven pond to swim and then gave them baths. DeeDee and I went for a long walk and sweated off our brownies from the night before. It was a very fun weekend filled with no studying, lots of good food and great friends!
